Introduction
A classic baati choke is cooked over coal, allowed to soak in pure ghee, and then served with chutney and dal. I have witnessed my mother-in-law roasting baati chokas in her tandoor I refer to it as the “bati oven” at her home. But I can’t make this dish at home as I don’t have a tandoor.
We therefore made the decision to eat our favourite dal baati and visit some traditional Rajasthani restaurants. We were shocked to discover that baati chokha was available in fried form, and we did not enjoy it. It was neither appetising nor healthful. After that, I made the decision to take action, and I had the notion to make bati in the oven.
