It was the pleasure to have our dinner at Jewel of nizam, The famous Minar located at Golkonda Resort, Gandipet, Hyderabad. The first thing that caught my eye over the prospect we selected for the consuming of a meal was the subtle beauty and refinement which pervaded the restaurant. The ivory trimming and fixtures added a nice touch and along with the chandeliers; one was set for the most memorable meal.

There were thousands of dishes, but we tried their famous Hyderabadi Gosht Biryani

Hyderabadi Gosht Biryani was a very unique preparation and belongs to the Hyderabadi style of preparation. The dish was built up with basmati rice, which was aromatic, and the next layer of mutton is soft and tender as it is slow cooked. The spices of choice used to season the rice are cumin, coriander, and cardamom, which together create a distinct and irresistible fragrance.

The mutton that is served here is cooked to perfection, flavoured with lots of spices and served in a rich gravy which goes to show the prowess of the chefs at Jewel of Nizam. It is juicy and you can easily pull the meat with the bones as they soften when you take a bite. The gravy, containing such spices as ground cumin, coriander, and turmeric, adds to the taste profile of the biryani seamlessly.

To complement this dish, the Hyderabadi Gosht Biryani is then accompanied with raita, which is a yoghurt based preparation. The creamy raita does an excellent job of countering the spiciness of the biryani and it is almost like a palate cleanser that leaves one ready and willing for the next tasty morsel.

The time and effort that Jewel of Nizam has invested into making their restaurant as close to the original as possible is quite impressive. Hyderabadi Gosht Biryani is further evidence of the restaurant’s commitment to the introduction and continuation of the Hyderabad food culture. Every aspect of the preparation, from the on-point rice to the juicy mutton, is a fine example of how a flawless biryani should be made.

Procedure

Marinating Mutton

  • Take mutton pieces in a tray, Add ginger and garlic paste on it. Now add raw papaya paste, garlic paste, red chilli powder, turmeric powder, Biryani masala, salt, cloves, green cardamom, and cinnamon. Mix them well.
  • Combine yogurt with caraway seed powder, chopped coriander leaves and green chillies, and leave it for 10 to 15 minutes now add ÂĽ cup fried onions and oil and Mix well. Squeeze lemon juice, mix all together and leave it in the refrigerator for 1-2 hours to marinate.

Cooking Rice

  • Take half the rice mixture and spread it over the layer of mutton you just filled into the handi. Cover and set aside.
  • Place another thin piece of cloth, preferably muslin cloth, on top of the rice and pour the rest in a bowl on top of the cloth. Pour 1 tablespoon of saffron in the milk and keep aside for some time and then make it roll in handi by removing excess water.
  • Add remaining saffron soaked milk, ginger julliens, remaining chopped coriander leaves, remaining torn mint leaves, remaining brown fried onions, screwpine water, rose water and remaining ghee.
  • Roll and dampen the edges with wheat flour paste. Simmer for 10 minutes on a medium level of heat. Put the handi on hot tawa and cook in dum for at least 30-40 minutes.

Conclusion

The dinner at Jewel of Nizam – The Minar was quite fascinating and I hope to visit the place again soon. The atmosphere was plain and classy, reminiscent of a fine dining restaurant where elegance was the name of the game. One of the most memorable dishes was the Hyderabadi Gosht Biryani; this dish was proof that the restaurant is focused on keeping the traditions of Hyderabad cuisine intact.
The mutton was cooked to perfection and had a slow-cooked technique with an excellent taste, while the basmati rice was aromatic with flavors of cumin, coriander, and cardamom. The well-cooked gravy and smooth raita really elevated the dish and it was a piece of art in my perspective.
The rice preparation in Jewel of Nizam truly mirrors Nizam’s commitment in using high quality ingredients and ensuring that each grain of rice is cooked perfectly and every piece of mutton is juicy.
