What is Doda Barfi?
Doda Barfi is an Indian sweet originating from the Punjab region of India and is made in a traditional manner. It is soft, moist, and highly delicious, and has been a part of the local fare for quite sometime now.
Ingredients Require for Making Doda Barfi
- Sprouted Wheat – 1 Cup
- Curd – 1/4 Cup
- Full Cream Milk – 1 Litre
- Sugar – 1/4 Cup (55 grams) (for glucose syrup)
- Lemon Juice – 3 – 4 tsp (for glucose syrup)
- Salt – 1/2 pinch (for glucose syrup)
- Brown Sugar – 1/2 Cup (90 grams)
- Coconut – 1/2 Cup, grated
- Cashews – 1/4 Cup
- Cardamom – 1/2 tsp
- Nutmeg Powder – 1/4 tsp
- Milk – 1 tbsp
- Cocoa Powder – 1 tsp
- Desi Ghee – 1/4 Cup (60 grams)
Procedure
- Rinse the wheat grains with water for 2-3 hours after they have begun to sprout. Drain and grind it coarsely until it is slightly grainy, then it is considered as flour.
- In a pan, melt the full cream milk. When the soup is boiling, lower the heat and allow it to cook until its quantity is halved. This should take about 30-40 minutes.
- In another bowl, combine the sugar, lemon juice, and salt to prepare the glucose syrup. Set aside.
- Pour this curd into the reduced milk and stir it well. Stir for 2-3 minutes until the mixture is thick.
- Sift in the ground sprouted wheat flour and mix it well with the batter. Stir for 5-7 minutes until the mixture separates from the sides of the pan.
- Combine the brown sugar and make sure that all the ingredients are well incorporated. Continue to cook for about 2-3 minutes.
- Take it off the heat source and pour the mixture onto a greased plate or tray. Spread it evenly and let it cool flat on a wire rack for about half an hour.
- Once cool, you can then shape it to your preferred sizes or cut into squares.
- In a pan; heat the desi ghee. Heat the oil over medium flame and fry the cashews until they turn golden brown. Remove and set aside.
- In the residual ghee, fry the grated coconut till it turns light golden brown in color. Remove and set aside.
- Finally garnish the barfi with fried cashews and coconuts. Sprinkle it with cardamom powder and nutmeg powder.
- Using another small bowl, you have to combine milk and cocoa power until you get a paste. Pour this paste on the barfi.
- To prepare, place the mixture in the fridge and let it chill for 2-3 hours before serving. It’s time to taste the sweet Doda Barfi!
Serving Suggestions
Doda Barfi is most appropriate when served cold and preferably with some cup of tea or coffee. Slice and place on a tray in small portions. Sprinkle chopped nuts on top and dust it well with cardamom powder.

Storing and Shelf Life
